Xavier says his family used to vacation in Florida. They fell in love with the area and then moved permanently.
His wife, Valérie, bakes beautiful personalized cakes and their son, Luigi, is the restaurant manager.
“We are a team. We are a team and a family that work together, ”suggested Xavier.
Café de Paris Bakery is pretty much filled all day with a queue at the door.
“No one sits here at all. We all run like crazy from the time we unlock the door in the morning until the time we lock the door at night, ”continued Luigi.
The family makes all of their pastries from scratch, including croissants, donuts and macaroons. The Café de Paris bakery originally only sold pastries.
“There was a void there for people who wanted a bigger breakfast,” Luigi said.
So they added sandwiches and eventually pancakes to the menu – which exploded in popularity. Xavier prepares around 300 pancakes, both savory and sweet, every day.
The Café de Paris bakery is located at 2300 Gulf Blvd. at Indian Rocks Beach. They are open Tuesday to Sunday from 7:30 a.m. to 3 p.m.
